Smashed Chickpea + Avocado Sandwiches
Ingredients:
1 can (15 oz) chickpeas, drained and rinsed
1 ripe avocado, peeled and pitted
2 tablespoons lemon juice
2 tablespoons fresh cilantro or parsley, chopped
1/4 teaspoon garlic powder
Salt and pepper to taste
8 slices whole grain bread
Optional toppings: lettuce, tomato, red onion, sprouts
Instructions:
In a mixing bowl, mash the chickpeas with a fork or potato masher until slightly chunky.
Add the ripe avocado to the bowl and continue mashing until well combined.
Stir in lemon juice, chopped cilantro or parsley, garlic powder, salt, and pepper to taste. Mix until evenly distributed.
Toast the slices of whole grain bread until golden brown and crispy.
Divide the smashed chickpea and avocado mixture evenly among 4 slices of toasted bread.
Top with optional toppings such as lettuce, tomato, red onion, and sprouts.
Place the remaining slices of toasted bread on top to form sandwiches.
Slice the sandwiches in half and serve immediately.
Notes :
You can customize the sandwich filling by adding ingredients like diced bell peppers, shredded carrots, or sliced cucumber.
Serve these sandwiches as a quick and satisfying lunch or dinner option.
Leftover smashed chickpea and avocado mixture can be stored in an airtight container in the refrigerator for up to 2 days.
