Greek Sushi Rolls 

Add a Mediterranean twist to your appetizers with these refreshing Greek Sushi Rolls! These cucumber rolls are filled with hummus, feta, olives, and tomatoes, making them a healthy and delicious treat. Perfect for any occasion!

Ingredients:
1 large cucumber
1/3 cup hummus
1/4 cup crumbled feta cheese
1/4 cup chopped Kalamata olives
1/4 cup chopped cherry tomatoes
Small sprigs of fresh dill
Lemon wedges (optional)
Directions:

Prepare Cucumber: Using a vegetable peeler, slice the cucumber into thin, flat strips. Place the strips on paper towels to remove excess moisture.
Assemble Rolls: On a clean cutting board or work surface, lay two strips of cucumber overlapping. Spread a thin layer of hummus on each strip, then sprinkle with feta, Kalamata olives, and cherry tomatoes.
Roll and Garnish: Roll each cucumber strip tightly. Place a small sprig of dill in each sushi piece. Squeeze fresh lemon juice on top if desired.
