Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup plain Greek yogurt
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp fresh orange zest
- 2 cups fresh rhubarb, diced into 1/4-inch pieces
- 1 tbsp granulated sugar
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides.
- In a small bowl, toss the diced rhubarb with 1 tbsp of sugar to draw out excess moisture.
- In a large bowl, whisk together the flour, 1 cup sugar, baking powder, baking soda, and salt until no lumps remain.
- Create a well in the center of the dry ingredients and add the Greek yogurt, melted butter, eggs, vanilla, and orange zest. Stir with a whisk until smooth and glossy, stopping as soon as the flour streaks disappear.
- Using a rubber spatula, gently fold the sugared rhubarb into the batter using a bottom-to-top motion.
- Pour the batter into the prepared pan, smooth the top, and bake for 55–65 minutes until a toothpick inserted into the center comes out clean and the exterior is deep golden-brown.
