Ingredients:

  • 3 tbsp chia seeds
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt
  • 1/2 cup fresh blueberries
  • 1 tbsp raw hemp seeds
  • 1 tbsp sliced almonds
  • 1 tsp ground cinnamon

Instructions:

  1. Combine chia seeds, almond milk, maple syrup, vanilla, and salt in a 16 oz glass mason jar.
  2. Whisk vigorously for 60 seconds until the mixture is well-combined and no dry clumps of seeds are visible.
  3. Place the jar in the refrigerator and set a timer for 10 minutes.
  4. After 10 minutes, remove the jar and stir again thoroughly to break up gelatinous clumps.
  5. Cover the jar and refrigerate for at least 4 hours or overnight.
  6. Stir the pudding once more before serving to ensure creaminess.
  7. Top with fresh blueberries, hemp seeds, and sliced almonds, then dust with ground cinnamon.
