Ingredients:

  • 4 cups (600g) cooked chicken breast, shredded or cubed
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) cracked black pepper
  • 1/2 cup (120g) mayonnaise
  • 1/2 cup (120g) plain Greek yogurt
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5ml) Dijon mustard
  • 1 cup (100g) celery, finely diced
  • 1/4 cup (40g) red onion, minced
  • 2 tbsp (8g) fresh parsley, chopped
  • 1 tbsp (15ml) honey

Instructions:

  1. Place the cooked chicken in a large mixing bowl. Season with salt and pepper, tossing to ensure even coverage.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, and honey until the mixture is smooth and velvety.
  3. Pour the prepared dressing over the seasoned chicken.
  4. Add the diced celery, minced red onion, and fresh parsley to the bowl.
  5. Using a rubber spatula, gently fold the ingredients together until the chicken is fully coated and the greens are evenly distributed.
