Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (150g) Cream of Wheat
- 1/3 cup (30g) unsweetened cocoa powder
- 1/4 tsp (1.5g) baking powder
- 1/4 tsp (1.5g) salt
- 1/2 cup (85g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, whisk together the melted butter and sugar. Add the eggs one at a time, whisking vigorously until the batter is glossy and smooth. Stir in the vanilla extract.
- Sift in the Cream of Wheat, cocoa powder, baking powder, and salt. Fold the mixture gently with a spatula until no dry pockets remain. Fold in the chocolate chips.
- Spread the batter evenly into the prepared pan. Bake for 25–30 minutes, until edges are slightly puffed and the center barely jiggles.
- Allow the brownies to cool completely in the pan for at least 1 hour to set the structure.
