Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) Cream of Wheat
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/4 tsp (1.5g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (85g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the melted butter and sugar. Add the eggs one at a time, whisking vigorously until the batter is glossy and smooth. Stir in the vanilla extract.
  3. Sift in the Cream of Wheat, cocoa powder, baking powder, and salt. Fold the mixture gently with a spatula until no dry pockets remain. Fold in the chocolate chips.
  4. Spread the batter evenly into the prepared pan. Bake for 25–30 minutes, until edges are slightly puffed and the center barely jiggles.
  5. Allow the brownies to cool completely in the pan for at least 1 hour to set the structure.
