Marry Me Chicken Tortellini
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
1 tablespoon unsalted butter
For the Sauce:
2 cloves garlic, minced
1 teaspoon Italian seasoning
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1/4 cup grated Parmesan cheese
1/4 cup chicken broth
For the Tortellini:
1 package (9 oz) refrigerated cheese tortellini
For Garnish:
Fresh basil, chopped
Extra Parmesan cheese
Directions:
Cook Chicken: Season chicken breasts with salt and pepper. In a large skillet, heat olive oil and butter over medium heat. Add chicken and cook until golden and no longer pink in the middle, about 6-7 minutes per side. Remove and set aside.
Make Sauce: In the same skillet, add garlic and Italian seasoning. Sauté for 1 minute. Stir in cream, sun-dried tomatoes, Parmesan, and chicken broth. Bring to a simmer and let thicken slightly, about 5 minutes.
Cook Tortellini: Meanwhile, cook tortellini according to package instructions. Drain.
Combine and Serve: Slice chicken and return to the skillet with the sauce. Add cooked tortellini and toss to coat. Garnish with basil and extra Parmesan before serving.
