Smoked Salmon Scramble Stuffed Croissants
Ingredients:
4 large croissants, halved
4 large eggs
2 tbsp double cream
1 tbsp butter
100g smoked salmon, sliced
2 tbsp chives, chopped
Salt and pepper to taste
Instructions:
Prepare the Croissants: Preheat your oven to 160°C (320°F). Place the halved croissants on a baking tray and warm them in the oven for about 5 minutes.
Make the Scrambled Eggs: In a bowl, whisk together the eggs and double cream. Season with salt and pepper.
Cook the Eggs: Melt the butter in a non-stick pan over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are softly scrambled and just set. Remove from heat.
Assemble the Croissants: Remove the croissants from the oven. Fill each croissant with scrambled eggs, a few slices of smoked salmon, and a sprinkle of chopped chives.
Serve: Serve the stuffed croissants immediately, while still warm.
