Elegant Black Forest Roll Cake
Ingredients
For the Cake:
3/4 cup (95g) all-purpose flour
1/4 cup (30g) cocoa powder
1 tsp baking powder
1/4 tsp salt
4 large eggs, room temperature
3/4 cup (150g) granulated sugar
1 tsp vanilla extract
2 tbsp vegetable oil
1/4 cup (60ml) milk
For the Cherry Filling:
1 cup (240ml) cherry preserves or cherry pie filling
1 tbsp kirsch (cherry liqueur), optional
For the Whipped Cream Filling:
1 1/2 cups (360ml) heavy whipping cream
1/4 cup (30g) powdered sugar
1 tsp vanilla extract
For Decoration:
1/2 cup (120ml) heavy whipping cream
2 tbsp powdered sugar
Fresh cherries
Chocolate shavings or curls
Instructions
Prepare the Cake:
Preheat your oven to 350°F (175°C). Line a 10×15 inch (25×38 cm) jelly roll pan with parchment paper and lightly grease it.
In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
In a large bowl, beat the eggs and sugar together using an electric mixer on high speed until pale and fluffy, about 5 minutes. Add the vanilla extract, vegetable oil, and milk, and mix until combined.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes or until the cake springs back when lightly touched.
Roll the Cake:
While the cake is baking, prepare a clean kitchen towel and sprinkle it with powdered sugar.
Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper. Starting from the short end, roll the cake and the towel together into a tight spiral. Allow it to cool completely.
Prepare the Fillings:
For the cherry filling, mix the cherry preserves or pie filling with the kirsch if using.
For the whipped cream filling, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Assemble the Cake:
Once the cake has cooled, gently unroll it. Spread the cherry filling evenly over the cake, leaving a small border around the edges.
Spread the whipped cream filling over the cherry layer.
Carefully re-roll the cake without the towel. Place the roll seam-side down on a serving plate.
Decorate:
For the decoration, beat the heavy whipping cream and powdered sugar until stiff peaks form.
Spread a thin layer of whipped cream over the rolled cake. Use the remaining whipped cream to pipe decorative swirls on top.
Garnish with fresh cherries and chocolate shavings or curls.
Serve:
