Kiwi Lime Cheesecake 
Treat yourself to a refreshing and tangy Kiwi Lime Cheesecake!  This vibrant dessert blends the creamy richness of cheesecake with the zesty flavors of lime and the tropical sweetness of kiwi. Perfect for warm weather or when you want to impress with something unique and delicious!
 Ingredients:
Crust:
• 1 1/2 cups graham cracker crumbs
• 1/4 cup granulated sugar
• 1/3 cup unsalted butter, melted
Cheesecake Filling:
• 16 oz cream cheese, softened
• 3/4 cup granulated sugar
• 3 large eggs
• 1 tsp vanilla extract
• 1/2 cup sour cream
• 1/4 cup fresh lime juice
• Zest of 2 limes
• 1-2 kiwis, peeled and finely chopped

Kiwi Lime Topping:
• 3-4 kiwis, peeled and sliced
• 2 tbsp granulated sugar
• 2 tbsp lime juice
• Zest of 1 lime
Garnish (optional):
• Whipped cream
• Lime zest
• Kiwi slices
 Directions:

1. Prepare the Crust: Preheat the oven to 325°F (163°C). Mix the graham cracker crumbs, sugar, and melted butter in a bowl until well combined. Press the mixture firmly into the bottom of a greased 9-inch springform pan. Bake for 8-10 minutes until golden and set, then set aside to cool.
2. Make the Cheesecake Filling: Beat the softened cream cheese and sugar in a large mixing bowl until smooth and creamy. Add the eggs one at a time, mixing on low speed until just combined. Stir in the vanilla extract, sour cream, lime juice, and lime zest. Gently fold in the finely chopped kiwi.
3. Bake the Cheesecake: Pour the cheesecake batter over the cooled crust. Place the springform pan in a water bath (wrap the bottom with foil to prevent leaks). Bake for 55-65 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour. Refrigerate for at least 4 hours or overnight.
4. Prepare the Kiwi Lime Topping: In a small bowl, mix together the sliced kiwis, sugar, lime juice, and lime zest. Let the mixture sit for about 10 minutes to allow the flavors to blend.
5. Assemble the Cheesecake: Once the cheesecake has fully chilled, spoon the kiwi lime topping evenly over the top of the cheesecake. Garnish with whipped cream, additional lime zest, and kiwi slices for an extra burst of flavor and color.
