 Indulge in this comforting and creamy Beef & Parmesan Tortellini!  Ingredients:
• 1 lb ground beef
• 2 tbsp olive oil, divided
• 3 cloves garlic, minced
• 1/2 cup diced onion
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1/2 tsp Italian seasoning
• 1/4 tsp red pepper flakes (optional)
• 1 cup beef broth
• 1 cup heavy cream
• 1/2 cup grated Parmesan cheese
• 1 package (20 oz) cheese tortellini (fresh or refrigerated)
• 2 cups baby spinach (optional)
• 1/4 cup chopped fresh basil (for garnish)
• Extra grated Parmesan cheese (for serving)
 Directions:
1. Cook the Ground Beef:

o In a large skillet over medium-high heat, add 1 tbsp of olive oil and the ground beef. Season with salt, black pepper, and Italian seasoning. Cook for 5-7 minutes, breaking up the beef with a spoon, until browned and cooked through. Drain excess fat if necessary and set aside.
2. Sauté the Aromatics:
o In the same skillet, add the remaining 1 tbsp of olive oil. Sauté the diced onion for 3-4 minutes until softened, then add the minced garlic and cook for an additional 1 minute until fragrant.
3. Make the Creamy Sauce:
o Add the beef broth and heavy cream to the skillet. Bring to a simmer over medium heat, stirring occasionally. Add the grated Parmesan cheese and stir until melted and the sauce thickens slightly.
4. Cook the Tortellini:
o Add the cheese tortellini to the sauce and cook for 5-7 minutes, or until the tortellini are tender and cooked through. If the sauce becomes too thick, add a splash of beef broth or water to reach your desired consistency.
5. Combine the Beef and Tortellini:
o Return the cooked ground beef to the skillet and stir to combine. Add the baby spinach, if using, and cook for 1-2 minutes until wilted.
