Ingredients:

  • Ice Cubes (Crushed or Standard)
  • Dark Soda (Dr. Pepper or Coca-Cola), 12 fl oz (355 ml), chilled
  • Coconut Syrup (e.g., Torani, Monin), 2 Tbsp (30 ml)
  • Heavy Cream or Half-and-Half, 1 Tbsp (15 ml)
  • Fresh Lime Juice, 1/2 tsp (2.5 ml)
  • Lime Wedge or Wheel, 1 wedge (For garnish)

Instructions:

  1. Chill and Fill: Ensure all liquid ingredients are thoroughly chilled. Fill your highball glass completely with ice (crushed ice provides a superior texture and cooling effect).
  2. Add Flavouring: Measure and pour the 2 tablespoons of coconut syrup directly over the ice in the glass.
  3. Introduce Acidity: Add the half teaspoon of fresh lime juice to the syrup mixture.
  4. Add the Dairy: Gently pour the 1 tablespoon of heavy cream (or half-and-half) over the ice and syrup.
  5. Pour the Soda: Slowly and carefully pour the 12 fl oz of chilled dark soda over the top of the ice. Pouring slowly prevents excessive fizz and overflow. Stop pouring about half an inch from the rim.
  6. Gentle Stirring: Use a long spoon to stir the mixture gently—just enough to ribbon the cream through the soda and combine the syrups. Do not aggressively stir, as this will flatten the carbonation. The aim is a marbled, cloudy appearance (the “dirty” effect).
  7. Garnish and Serve: Place a fresh lime wedge on the rim of the glass. Serve immediately with a sturdy straw.
