Ingredients:

  • 2 large ripe peaches, sliced into wedges (approx. 1 lb / 450g)
  • 3 large heirloom tomatoes, sliced into rounds (approx. 1.5 lbs / 680g)
  • 8 oz (225g) fresh burrata cheese, torn into pieces
  • 1/4 cup (15g) fresh basil leaves, torn
  • 1/4 tsp (1.5g) flaky sea salt
  • 3 tbsp (45ml) extra-virgin olive oil
  • 1 tbsp (15ml) balsamic vinegar
  • 1 tsp (5ml) fresh lemon juice
  • 1 small clove garlic, minced
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Slice the heirloom tomatoes into 1/2-inch rounds and the peaches into uniform wedges. Arrange them on a wide platter, alternating colors to create a mosaic.
  2. In a small bowl or jar, combine the olive oil, balsamic vinegar, lemon juice, minced garlic, and black pepper. Whisk vigorously until the mixture is opaque and thickened.
  3. Place the torn pieces of burrata cheese in the gaps between the fruit and vegetables. Drizzle the dressing evenly over the top, then scatter the torn basil leaves and a sprinkle of flaky sea salt across the platter.
