Ingredients:

  • 1 lb lean ground beef
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 3 tbsp taco seasoning
  • 1/2 cup beef broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 8 oz sour cream
  • 2 cups shredded Mexican cheese blend
  • 32 oz frozen tater tots
  • 1 cup shredded sharp cheddar cheese

Instructions:

  1. Brown the ground beef and diced onion in a skillet over medium-high heat until the meat is mahogany-colored and no longer pink. Drain excess fat.
  2. Stir in the minced garlic and taco seasoning, cooking for 60 seconds until fragrant.
  3. Stir in the diced tomatoes and beef broth. Simmer for 5 minutes until the liquid reduces by half.
  4. Remove from heat and fold in the sour cream and the Mexican cheese blend. Stir until the mixture is smooth and glossy.
  5. Pour the beef mixture into the bottom of a 9x13 inch baking dish, spreading it into an even layer.
  6. Arrange the frozen tater tots in tight, neat rows across the top of the beef without overlapping.
  7. Sprinkle the sharp cheddar cheese over the tater tots.
  8. Bake at 400°F (200°C) for 30-35 minutes.
  9. Switch the oven to broil for the final 2 minutes until the cheese is bubbling and the tots are deep golden brown.
