Ingredients:
- 1 lb lean ground beef
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 3 tbsp taco seasoning
- 1/2 cup beef broth
- 1 can (14.5 oz) diced tomatoes with green chilies
- 8 oz sour cream
- 2 cups shredded Mexican cheese blend
- 32 oz frozen tater tots
- 1 cup shredded sharp cheddar cheese
Instructions:
- Brown the ground beef and diced onion in a skillet over medium-high heat until the meat is mahogany-colored and no longer pink. Drain excess fat.
- Stir in the minced garlic and taco seasoning, cooking for 60 seconds until fragrant.
- Stir in the diced tomatoes and beef broth. Simmer for 5 minutes until the liquid reduces by half.
- Remove from heat and fold in the sour cream and the Mexican cheese blend. Stir until the mixture is smooth and glossy.
- Pour the beef mixture into the bottom of a 9x13 inch baking dish, spreading it into an even layer.
- Arrange the frozen tater tots in tight, neat rows across the top of the beef without overlapping.
- Sprinkle the sharp cheddar cheese over the tater tots.
- Bake at 400°F (200°C) for 30-35 minutes.
- Switch the oven to broil for the final 2 minutes until the cheese is bubbling and the tots are deep golden brown.
