Ingredients:

  • 1/2 cup (80g) chia seeds
  • 2 cups (480ml) unsweetened almond milk
  • 2 tbsp (30ml) melted coconut oil
  • 1 tsp (5ml) pure vanilla extract
  • 3 tbsp (36g) granulated monk fruit sweetener
  • 1/4 tsp (1.5g) sea salt

Instructions:

  1. Combine the chia seeds, monk fruit sweetener, and sea salt in a medium mixing bowl. Note: Mixing dry ingredients first prevents the sweetener from clumping.
  2. Pour in the almond milk, vanilla extract, and melted coconut oil.
  3. Whisk the mixture vigorously for 2 minutes until the sweetener is fully dissolved and you see no dry pockets of seeds.
  4. Pour the mixture evenly into four 8 oz glass mason jars.
  5. Let the jars sit on the counter for 10 minutes. Note: This allows the seeds to start absorbing liquid before they settle.
  6. Stir each jar again, scraping the bottom and sides until the mixture is uniform.
  7. Seal the lids tightly to keep out fridge odors.
  8. Refrigerate for at least 4 hours or overnight until the texture is thick and spoonable.
