Ingredients:

  • 1 cup steel cut oats
  • 2 tbsp chia seeds
  • 0.25 tsp sea salt
  • 2 cups unsweetened almond milk
  • 0.5 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 2 tbsp maple syrup
  • 1 tsp pure vanilla extract
  • 0.5 tsp ground cinnamon

Instructions:

  1. Place the 1 cup steel cut oats, 2 cups almond milk, and 0.25 tsp sea salt in a small saucepan over medium high heat.
  2. Bring the mixture to a rolling boil, then immediately reduce heat and let it simmer for exactly 60 seconds.
  3. Remove from heat and let the mixture sit for 2 minutes to cool slightly.
  4. In a separate bowl or directly in your jars, whisk together the 0.5 cup Greek yogurt, 1 scoop vanilla protein powder, 2 tbsp maple syrup, 1 tsp vanilla, and 0.5 tsp cinnamon.
  5. Pour the warm oat and milk mixture into your yogurt base. Stir vigorously until the protein powder is fully dissolved.
  6. Fold in the 2 tbsp chia seeds.
  7. Pour the mixture into four mason jars, leaving about an inch of headspace at the top for toppings.
  8. Seal the lids tightly and place the jars in the fridge for at least 8 hours.
  9. Give the jar a good stir in the morning to redistribute any settled liquid and fluff up the grains.
  10. Garnish with berries, nuts, or a dollop of nut butter just before you head out the door.
