Ingredients:
- 1 cup steel cut oats
- 2 tbsp chia seeds
- 0.25 tsp sea salt
- 2 cups unsweetened almond milk
- 0.5 cup plain Greek yogurt
- 1 scoop vanilla protein powder
- 2 tbsp maple syrup
- 1 tsp pure vanilla extract
- 0.5 tsp ground cinnamon
Instructions:
- Place the 1 cup steel cut oats, 2 cups almond milk, and 0.25 tsp sea salt in a small saucepan over medium high heat.
- Bring the mixture to a rolling boil, then immediately reduce heat and let it simmer for exactly 60 seconds.
- Remove from heat and let the mixture sit for 2 minutes to cool slightly.
- In a separate bowl or directly in your jars, whisk together the 0.5 cup Greek yogurt, 1 scoop vanilla protein powder, 2 tbsp maple syrup, 1 tsp vanilla, and 0.5 tsp cinnamon.
- Pour the warm oat and milk mixture into your yogurt base. Stir vigorously until the protein powder is fully dissolved.
- Fold in the 2 tbsp chia seeds.
- Pour the mixture into four mason jars, leaving about an inch of headspace at the top for toppings.
- Seal the lids tightly and place the jars in the fridge for at least 8 hours.
- Give the jar a good stir in the morning to redistribute any settled liquid and fluff up the grains.
- Garnish with berries, nuts, or a dollop of nut butter just before you head out the door.
