Ingredients:

  • 4 cups peaches, sliced (approx. 800g)
  • 0.5 cup granulated sugar (100g) for fruit
  • 1 tbsp lemon juice (15ml)
  • 1 tsp ground cinnamon (2g)
  • 1 tsp cornstarch
  • 0.5 cup unsalted butter (113g)
  • 1 cup all-purpose flour (125g)
  • 1 cup granulated sugar (200g) for batter
  • 1 tbsp baking powder (12g)
  • 0.25 tsp salt (1.5g)
  • 1 cup whole milk (240ml)

Instructions:

  1. Preheat your oven to 375°F (190°C). Place the stick of unsalted butter in a 9x13 inch baking dish and place it in the oven while it preheats until completely melted.
  2. In a mixing bowl, toss the sliced peaches with 1/2 cup of sugar, lemon juice, cinnamon, and cornstarch. If using fresh peaches, simmer in a saucepan for 5 minutes to soften; if using canned, drain half the syrup before mixing.
  3. In a separate large bowl, whisk together the flour, the remaining 1 cup of sugar, baking powder, and salt. Gradually pour in the milk and whisk until just combined.
  4. Remove the baking dish from the oven. Pour the batter directly over the melted butter. Do not stir.
  5. Spoon the peach mixture evenly over the batter. Do not stir, as the batter will rise through the fruit during baking.
  6. Bake for 45 minutes, or until the top is golden brown and the fruit juices are bubbling around the edges.
