Ingredients:
- 4 cups peaches, sliced (approx. 800g)
- 0.5 cup granulated sugar (100g) for fruit
- 1 tbsp lemon juice (15ml)
- 1 tsp ground cinnamon (2g)
- 1 tsp cornstarch
- 0.5 cup unsalted butter (113g)
- 1 cup all-purpose flour (125g)
- 1 cup granulated sugar (200g) for batter
- 1 tbsp baking powder (12g)
- 0.25 tsp salt (1.5g)
- 1 cup whole milk (240ml)
Instructions:
- Preheat your oven to 375°F (190°C). Place the stick of unsalted butter in a 9x13 inch baking dish and place it in the oven while it preheats until completely melted.
- In a mixing bowl, toss the sliced peaches with 1/2 cup of sugar, lemon juice, cinnamon, and cornstarch. If using fresh peaches, simmer in a saucepan for 5 minutes to soften; if using canned, drain half the syrup before mixing.
- In a separate large bowl, whisk together the flour, the remaining 1 cup of sugar, baking powder, and salt. Gradually pour in the milk and whisk until just combined.
- Remove the baking dish from the oven. Pour the batter directly over the melted butter. Do not stir.
- Spoon the peach mixture evenly over the batter. Do not stir, as the batter will rise through the fruit during baking.
- Bake for 45 minutes, or until the top is golden brown and the fruit juices are bubbling around the edges.
