Ingredients:
- 4 large eggs
- 1 tbsp (15g) unsalted butter
- 1 pinch (1g) kosher salt
- 1 pinch (1g) cracked black pepper
- 4 slices (120g) sourdough bread
- 4 slices (80g) Colby-Jack or Sharp Cheddar cheese
- 3 tbsp (42g) unsalted butter, softened
- Optional: cooked breakfast meat (e.g., bacon or sausage)
Instructions:
- Whisk the eggs, salt, and pepper in a bowl until no streaks of white remain.
- Melt 1 tbsp (15g) of butter in a skillet over medium-low heat. Pour in the eggs and let them set for 30 seconds, then gently push the curds across the pan with a spatula. Remove from heat while they still look slightly wet to ensure they stay soft.
- Spread a generous layer of softened butter on one side of each bread slice.
- Assemble the sandwich: place one slice of bread butter-side down, layer with one slice of cheese, a scoop of soft scrambled eggs, optional cooked breakfast meat, another slice of cheese, and the second bread slice butter-side up.
- Place the sandwiches in the skillet over medium heat. Press down lightly with a spatula and grill for 3-4 minutes per side until the bread is deep mahogany-gold and the cheese is completely melted.
