Ingredients:

  • 4 large eggs
  • 1 tbsp (15g) unsalted butter
  • 1 pinch (1g) kosher salt
  • 1 pinch (1g) cracked black pepper
  • 4 slices (120g) sourdough bread
  • 4 slices (80g) Colby-Jack or Sharp Cheddar cheese
  • 3 tbsp (42g) unsalted butter, softened
  • Optional: cooked breakfast meat (e.g., bacon or sausage)

Instructions:

  1. Whisk the eggs, salt, and pepper in a bowl until no streaks of white remain.
  2. Melt 1 tbsp (15g) of butter in a skillet over medium-low heat. Pour in the eggs and let them set for 30 seconds, then gently push the curds across the pan with a spatula. Remove from heat while they still look slightly wet to ensure they stay soft.
  3. Spread a generous layer of softened butter on one side of each bread slice.
  4. Assemble the sandwich: place one slice of bread butter-side down, layer with one slice of cheese, a scoop of soft scrambled eggs, optional cooked breakfast meat, another slice of cheese, and the second bread slice butter-side up.
  5. Place the sandwiches in the skillet over medium heat. Press down lightly with a spatula and grill for 3-4 minutes per side until the bread is deep mahogany-gold and the cheese is completely melted.
