Ingredients:

  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 1 tsp fresh lemon juice
  • 1 tsp vanilla extract
  • 2.75 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp fine sea salt
  • 0.25 cup granulated sugar (for coating)
  • 2 tbsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a stand mixer or with a hand mixer, cream the softened butter and 1.5 cups of sugar on medium-high speed for 3 minutes until pale and fluffy.
  3. Add the eggs one at a time, then mix in the vanilla extract and lemon juice until the batter is a cohesive, aerated cream.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients on the lowest speed until just combined.
  5. In a small bowl, combine the remaining 1/4 cup sugar and 2 tablespoons of ground cinnamon.
  6. Roll dough into 1-inch balls, roll thoroughly in the cinnamon-sugar mixture, and place 2 inches apart on the baking sheets.
  7. Bake for 10 minutes at 350°F until the edges are set and the tops have crinkled. Cool on a wire rack.
