Ingredients:
- 1 cup unsalted butter, softened
- 1.5 cups granulated sugar
- 2 large eggs
- 1 tsp fresh lemon juice
- 1 tsp vanilla extract
- 2.75 cups all-purpose flour
- 2 tsp baking powder
- 0.5 tsp fine sea salt
- 0.25 cup granulated sugar (for coating)
- 2 tbsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
- In a stand mixer or with a hand mixer, cream the softened butter and 1.5 cups of sugar on medium-high speed for 3 minutes until pale and fluffy.
- Add the eggs one at a time, then mix in the vanilla extract and lemon juice until the batter is a cohesive, aerated cream.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients on the lowest speed until just combined.
- In a small bowl, combine the remaining 1/4 cup sugar and 2 tablespoons of ground cinnamon.
- Roll dough into 1-inch balls, roll thoroughly in the cinnamon-sugar mixture, and place 2 inches apart on the baking sheets.
- Bake for 10 minutes at 350°F until the edges are set and the tops have crinkled. Cool on a wire rack.
