Ingredients:

  • 2 cups (250g) All-purpose flour
  • 3 tbsp (40g) Granulated sugar
  • 2 tsp Baking powder
  • 0.5 tsp Baking soda
  • 0.5 tsp Fine sea salt
  • 1.5 cups (350ml) Whole milk
  • 1 large egg
  • 3 tbsp (45ml) Vegetable oil
  • 1 tsp Pure vanilla extract

Instructions:

  1. Combine dry ingredients, whisk in wet, then rest batter briefly. Sift flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk milk, egg, oil, and vanilla. Pour wet into dry, mix until just combined with lumps, then let sit for 10 minutes before cooking.
  2. Allow the batter to sit for 10 minutes to allow the flour to hydrate and the leavening agents to bloom.
  3. Heat a heavy-bottomed non-stick skillet over medium heat. Pour batter and cook until bubbles form on the surface, then flip with a wide spatula and cook until the second side is mahogany-colored.
