Ingredients:
- 10 oz frozen spinach, thawed and squeezed completely dry
- 1/2 cup fresh spinach, finely chopped
- 1 cup seasoned stuffing mix
- 1/2 cup grated Parmesan cheese
- 2 large eggs, room temperature
- 4 tbsp unsalted butter, melted
- 1 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions:
- Squeeze the thawed spinach using a kitchen towel until no more water escapes.
- In a large bowl, combine the dried spinach, fresh spinach, stuffing mix, Parmesan, eggs, melted butter, and seasonings.
- Stir the ingredients until a thick, homogenous paste forms.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Using a scoop, form the mixture into 1-inch balls and space them evenly on the baking sheet.
- Bake for 15–20 minutes, or until the balls are mahogany-colored and feel firm to the touch.
- Remove from the oven and let the balls rest on the pan for 5 minutes to allow internal proteins to set.
