Ingredients:

  • 10 oz frozen spinach, thawed and squeezed completely dry
  • 1/2 cup fresh spinach, finely chopped
  • 1 cup seasoned stuffing mix
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, room temperature
  • 4 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Instructions:

  1. Squeeze the thawed spinach using a kitchen towel until no more water escapes.
  2. In a large bowl, combine the dried spinach, fresh spinach, stuffing mix, Parmesan, eggs, melted butter, and seasonings.
  3. Stir the ingredients until a thick, homogenous paste forms.
  4. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Using a scoop, form the mixture into 1-inch balls and space them evenly on the baking sheet.
  6. Bake for 15–20 minutes, or until the balls are mahogany-colored and feel firm to the touch.
  7. Remove from the oven and let the balls rest on the pan for 5 minutes to allow internal proteins to set.
