Ingredients:
- 2 pints (600g) cherry tomatoes, halved
- 4 cloves (20g) garlic, smashed and peeled
- 1/4 cup (15g) fresh basil leaves, chiffonade
- 3 tbsp (45ml) extra virgin olive oil
- 1 tsp (6g) kosher salt
- 1/2 tsp (3g) freshly cracked black pepper
- 1 tbsp (15ml) balsamic vinegar
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the halved cherry tomatoes and smashed garlic.
- Drizzle with olive oil and balsamic vinegar, then sprinkle with salt and pepper. Toss gently until evenly coated.
- Spread the tomatoes onto the prepared baking sheet in a single layer, cut-side up.
- Roast for 20 minutes until skins wrinkle and edges turn a deep, concentrated red with mahogany spots.
- Remove from the oven and let rest for 2 minutes.
- Stir in the fresh basil while the tomatoes are still hot to release the aromatic oils.
