Ingredients:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup creamy peanut butter
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1/8 tsp fine sea salt
  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk

Instructions:

  1. In a medium mixing bowl, combine the Greek yogurt, peanut butter, maple syrup, vanilla, and salt. Whisk vigorously until the mixture is completely smooth.
  2. Pour in the almond milk and whisk until the base is uniform.
  3. Fold in the chia seeds and stir for 60 seconds to ensure no seed is left dry.
  4. Divide the mixture evenly between two 8 oz mason jars.
  5. Let the jars sit on the counter for 5 minutes, then give them one final stir to break up any settled clumps.
  6. Seal with lids and refrigerate for at least 4 hours, or overnight for a fully set texture.
