Ingredients:
- 1/2 cup plain Greek yogurt
- 1/4 cup creamy peanut butter
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1/8 tsp fine sea salt
- 1/4 cup chia seeds
- 1 cup unsweetened almond milk
Instructions:
- In a medium mixing bowl, combine the Greek yogurt, peanut butter, maple syrup, vanilla, and salt. Whisk vigorously until the mixture is completely smooth.
- Pour in the almond milk and whisk until the base is uniform.
- Fold in the chia seeds and stir for 60 seconds to ensure no seed is left dry.
- Divide the mixture evenly between two 8 oz mason jars.
- Let the jars sit on the counter for 5 minutes, then give them one final stir to break up any settled clumps.
- Seal with lids and refrigerate for at least 4 hours, or overnight for a fully set texture.
