Ingredients:

  • 2 cups (180g) rolled oats
  • 1/4 cup (30g) peanut butter powder
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1/2 cup (125g) creamy peanut butter
  • 1/3 cup (80ml) maple syrup
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking pan with cooking spray or line it with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, milk, peanut butter, maple syrup, and vanilla extract until the mixture is smooth and the peanut butter is fully incorporated.
  3. Gently fold in the rolled oats, peanut butter powder, baking powder, and salt. Stir just until combined, avoiding overworking the batter.
  4. Pour the batter into the prepared pan and smooth the top with a spatula.
  5. Bake for 35–40 minutes until the edges are golden brown and the center feels firm to the touch.
  6. Test the center by pressing lightly; it should spring back slightly. Bake until it doesn't jiggle in the middle.
  7. Remove from the oven and let it cool in the pan for 10 minutes.
  8. Lift the oatmeal out using the parchment paper and slice into 9 equal squares.
