Ingredients:
- 2 cups (180g) rolled oats
- 1/4 cup (30g) peanut butter powder
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 2 large eggs
- 1 cup (240ml) milk
- 1/2 cup (125g) creamy peanut butter
- 1/3 cup (80ml) maple syrup
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, whisk together the eggs, milk, peanut butter, maple syrup, and vanilla extract until the mixture is smooth and the peanut butter is fully incorporated.
- Gently fold in the rolled oats, peanut butter powder, baking powder, and salt. Stir just until combined, avoiding overworking the batter.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 35–40 minutes until the edges are golden brown and the center feels firm to the touch.
- Test the center by pressing lightly; it should spring back slightly. Bake until it doesn't jiggle in the middle.
- Remove from the oven and let it cool in the pan for 10 minutes.
- Lift the oatmeal out using the parchment paper and slice into 9 equal squares.
