Ingredients:

  • 1 lb lean ground beef (90/10)
  • 1 large egg, lightly beaten
  • 4 cloves garlic, minced into a fine paste
  • 0.5 cup fresh Italian flat-leaf parsley, finely chopped
  • 1 tbsp fresh oregano, minced
  • 0.5 tsp red pepper flakes
  • 0.5 tsp sea salt
  • 0.5 tsp cracked black pepper
  • 0.5 cup panko breadcrumbs
  • 2 tbsp plain Greek yogurt
  • 0.25 cup freshly grated Parmesan cheese

Instructions:

  1. In a large mixing bowl, whisk together the egg, Greek yogurt, minced garlic, parsley, oregano, red pepper flakes, sea salt, black pepper, and Parmesan cheese until well combined.
  2. Add the lean ground beef and panko breadcrumbs to the aromatic mixture. Using clean hands, gently fold the ingredients together until the green herbs and white yogurt flecks are evenly dispersed. Do not overwork the meat.
  3. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  4. Using a 1.5 tablespoon cookie scoop, portion the mixture into approximately 20-24 uniform meatballs and place them on the prepared baking sheet.
  5. Roast in the center of the oven for 18-20 minutes until a mahogany-colored crust forms and the internal temperature reaches 160°F.
