Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- 2 tbsp (16g) cornstarch
- 1 tbsp (15ml) lemon juice
- 2 tbsp (30ml) maple syrup or honey
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 cup (90g) old-fashioned rolled oats
- 1/2 cup (60g) almond flour
- 1/4 cup (50g) coconut sugar or light brown sugar
- 1/3 cup (80g) melted coconut oil or unsalted butter
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced peaches with lemon juice and maple syrup.
- Whisk together the cornstarch, cinnamon, and salt in a small ramekin, then sprinkle over the peaches and toss gently until evenly coated.
- Pour the peach mixture into a 9-inch cast iron skillet or ceramic baking dish.
- In a medium bowl, combine the rolled oats, almond flour, coconut sugar, cinnamon, and salt.
- Pour in the melted coconut oil or butter and stir with a fork until the mixture forms small, pea-sized clumps.
- Spread the topping evenly over the peaches, leaving a small gap at the edges to prevent bubbling over.
- Bake for 30 minutes, or until the fruit filling is bubbling vigorously and the oat topping has turned a deep, golden mahogany.
- Remove from the oven and let it rest for 10 minutes to allow the filling to set.
