Ingredients:

  • 1/2 cup (113g) unsalted butter, melted
  • 3/4 cup (150g) brown sugar, packed
  • 1/4 cup (50g) granulated white sugar
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1 1/2 cups (150g) rolled oats
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Whisk the melted butter with brown and white sugars until smooth. Beat in the egg and vanilla extract until the mixture looks glossy and well-emulsified.
  2. Fold in the flour, baking soda, and salt until just combined. Stir in the rolled oats and chocolate chips by hand, ensuring no pockets of dry flour remain.
  3. Press the dough evenly into a parchment-lined 8x8 inch baking pan. Bake at 350°F (175°C) for 20 minutes or until the edges are a deep golden brown and the center is set but not firm. Let cool completely in the pan.
