- 3/4 cup (150g) brown sugar, packed
- 1/4 cup (50g) granulated white sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 1/2 cups (150g) rolled oats
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Whisk the melted butter with brown and white sugars until smooth. Beat in the egg and vanilla extract until the mixture looks glossy and well-emulsified.
- Fold in the flour, baking soda, and salt until just combined. Stir in the rolled oats and chocolate chips by hand, ensuring no pockets of dry flour remain.
- Press the dough evenly into a parchment-lined 8x8 inch baking pan. Bake at 350°F (175°C) for 20 minutes or until the edges are a deep golden brown and the center is set but not firm. Let cool completely in the pan.
