Ingredients:

  • 6 oz sun-dried tomatoes (dry-packed, sliced or whole)
  • 1/2 cup warm water
  • 1 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the dry sun-dried tomatoes in a small bowl and cover them with warm water. Let them sit for 10–15 minutes until they become pliable.
  2. Drain the tomatoes thoroughly using a fine-mesh strainer and pat dry with a paper towel to remove all excess water.
  3. In a glass jar, combine the extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Stir vigorously or shake the jar until the salt is dissolved.
  4. Submerge the softened tomatoes into the marinade, pressing them down with a spoon to ensure they are completely covered by the oil.
  5. Seal the lid tightly and let the jar sit at room temperature for at least 2 hours, or overnight in the fridge for maximum flavor depth.
