Ingredients:
- 6 oz sun-dried tomatoes (dry-packed, sliced or whole)
- 1/2 cup warm water
- 1 cup extra-virgin olive oil
- 2 tbsp red wine vinegar
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Place the dry sun-dried tomatoes in a small bowl and cover them with warm water. Let them sit for 10–15 minutes until they become pliable.
- Drain the tomatoes thoroughly using a fine-mesh strainer and pat dry with a paper towel to remove all excess water.
- In a glass jar, combine the extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Stir vigorously or shake the jar until the salt is dissolved.
- Submerge the softened tomatoes into the marinade, pressing them down with a spoon to ensure they are completely covered by the oil.
- Seal the lid tightly and let the jar sit at room temperature for at least 2 hours, or overnight in the fridge for maximum flavor depth.
