Ingredients:

  • 300g Lacinato or Curly Kale, stems removed and finely ribboned
  • 60g Dried Cranberries
  • 60g Toasted Walnut halves, roughly chopped
  • 75g Feta Cheese, crumbled
  • 40g Red Onion, very thinly sliced
  • 45ml Extra Virgin Olive Oil
  • 22ml Fresh Lemon Juice
  • 5ml Apple Cider Vinegar
  • 7g Honey
  • 0.5 tsp Sea Salt
  • 0.25 tsp Cracked Black Pepper

Instructions:

  1. Place the ribboned kale into a large mixing bowl. Drizzle with a small portion of the olive oil and a pinch of salt. Massage the leaves by hand for 1-2 minutes until they become dark green, tender, and reduced in volume.
  2. In a small glass jar or bowl, whisk together the remaining olive oil, lemon juice, apple cider vinegar, honey, salt, and pepper until the dressing is fully emulsified and opaque.
  3. Add the dried cranberries, chopped walnuts, and sliced red onion to the bowl with the massaged kale. Pour the dressing over the ingredients and toss thoroughly to ensure even coating.
  4. Gently fold in the crumbled feta cheese just before serving to maintain its texture and contrast.
