Ingredients:
- 300g Lacinato or Curly Kale, stems removed and finely ribboned
- 60g Dried Cranberries
- 60g Toasted Walnut halves, roughly chopped
- 75g Feta Cheese, crumbled
- 40g Red Onion, very thinly sliced
- 45ml Extra Virgin Olive Oil
- 22ml Fresh Lemon Juice
- 5ml Apple Cider Vinegar
- 7g Honey
- 0.5 tsp Sea Salt
- 0.25 tsp Cracked Black Pepper
Instructions:
- Place the ribboned kale into a large mixing bowl. Drizzle with a small portion of the olive oil and a pinch of salt. Massage the leaves by hand for 1-2 minutes until they become dark green, tender, and reduced in volume.
- In a small glass jar or bowl, whisk together the remaining olive oil, lemon juice, apple cider vinegar, honey, salt, and pepper until the dressing is fully emulsified and opaque.
- Add the dried cranberries, chopped walnuts, and sliced red onion to the bowl with the massaged kale. Pour the dressing over the ingredients and toss thoroughly to ensure even coating.
- Gently fold in the crumbled feta cheese just before serving to maintain its texture and contrast.
