Ingredients:
- 1/2 cup (60g) whole wheat berries
- 1 pinch (0.5g) fine sea salt
- 2 cups (480ml) water
- 1 tbsp (14g) unsalted butter
- 1 tbsp (12g) maple syrup
- 1/4 tsp (1.25ml) pure vanilla extract
Instructions:
- Place the whole wheat berries in a blender or food processor. Pulse in short, 3-second bursts until the berries resemble fine, pale sand. Pass the meal through a sieve to remove any remaining coarse husks if desired.
- Pour water into a small saucepan and bring to a gentle simmer over medium heat. Whisk in the salt and butter until the butter is completely melted.
- Slowly rain the milled wheat into the liquid while whisking vigorously. Stir constantly for 5–8 minutes until the mixture thickens into a glossy porridge that coats the back of a spoon.
- Remove from heat. Stir in the vanilla extract and maple syrup. Let the porridge rest for 2 minutes to allow the grains to fully hydrate.
