Ingredients:

  • 1/2 cup (60g) whole wheat berries
  • 1 pinch (0.5g) fine sea salt
  • 2 cups (480ml) water
  • 1 tbsp (14g) unsalted butter
  • 1 tbsp (12g) maple syrup
  • 1/4 tsp (1.25ml) pure vanilla extract

Instructions:

  1. Place the whole wheat berries in a blender or food processor. Pulse in short, 3-second bursts until the berries resemble fine, pale sand. Pass the meal through a sieve to remove any remaining coarse husks if desired.
  2. Pour water into a small saucepan and bring to a gentle simmer over medium heat. Whisk in the salt and butter until the butter is completely melted.
  3. Slowly rain the milled wheat into the liquid while whisking vigorously. Stir constantly for 5–8 minutes until the mixture thickens into a glossy porridge that coats the back of a spoon.
  4. Remove from heat. Stir in the vanilla extract and maple syrup. Let the porridge rest for 2 minutes to allow the grains to fully hydrate.
