Ingredients:

  • 3 large eggs
  • 1 cup liquid egg whites
  • 1 can (15 oz) black beans, rinsed and drained
  • 8 oz precooked chicken sausage, diced
  • 1 cup fresh spinach, chopped
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup yellow onion, diced
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 5 large high-fiber tortillas
  • 1 cup shredded sharp cheddar cheese
  • 1 tbsp olive oil

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and red bell pepper to the skillet and sauté for 3-4 minutes until translucent.
  3. Stir in the diced chicken sausage and black beans, cooking for 5 minutes until beans blister and sausage browns.
  4. Fold in the chopped spinach and cook for about 60 seconds until wilted.
  5. In a mixing bowl, whisk together the eggs, egg whites, smoked paprika, and garlic powder until smooth.
  6. Lower the skillet heat to medium-low and pour the egg mixture over the sautéed filling.
  7. Gently fold the filling into the eggs, stirring occasionally, until the eggs are set but still moist.
  8. Remove the skillet from heat and stir in the shredded cheddar cheese until melted.
  9. Scoop approximately 3/4 cup of the filling into the center of each high-fiber tortilla.
  10. Fold in the sides of the tortilla and roll tightly into a burrito.
  11. Place burritos back in the skillet over medium heat and sear until the outer layer is crisp and mahogany-colored.
