Ingredients:
- 1/2 cup (60g) hard red or white wheat berries (milled coarsely)
- 2 cups (480ml) unsweetened almond milk
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) ground cinnamon
- 1/2 cup (75g) fresh blueberries
- 1/4 cup (40g) sliced strawberries
- 1 tbsp (15ml) raw honey
- 1 tsp (5g) unsalted butter
Instructions:
- Combine the milled wheat, milk, and salt in a small saucepan. Whisk vigorously over medium heat until the mixture begins to bubble to prevent clumping.
- Reduce heat to low and stir frequently for 10–12 minutes until the cereal reaches a custard-like consistency and pulls away slightly from the sides of the pan.
- Remove the saucepan from heat. Stir in the unsalted butter and ground cinnamon until fully incorporated.
- Gently fold in half of the fresh berries using the residual heat to soften them. Transfer to a bowl and top with the remaining fresh fruit and a drizzle of honey.
