Ingredients:

  • 1/2 cup (60g) hard red or white wheat berries (milled coarsely)
  • 2 cups (480ml) unsweetened almond milk
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) ground cinnamon
  • 1/2 cup (75g) fresh blueberries
  • 1/4 cup (40g) sliced strawberries
  • 1 tbsp (15ml) raw honey
  • 1 tsp (5g) unsalted butter

Instructions:

  1. Combine the milled wheat, milk, and salt in a small saucepan. Whisk vigorously over medium heat until the mixture begins to bubble to prevent clumping.
  2. Reduce heat to low and stir frequently for 10–12 minutes until the cereal reaches a custard-like consistency and pulls away slightly from the sides of the pan.
  3. Remove the saucepan from heat. Stir in the unsalted butter and ground cinnamon until fully incorporated.
  4. Gently fold in half of the fresh berries using the residual heat to soften them. Transfer to a bowl and top with the remaining fresh fruit and a drizzle of honey.
