Ingredients:
- 1 cup (245g) Plain Greek Yogurt
- 1 clove (5g) Garlic, minced into a paste
- 1 tsp (5ml) Fresh lemon juice
- 1/4 tsp (1.5g) Sea salt
- 1 tbsp (15ml) Fresh dill, finely chopped
- 4 Large (200g) Fresh eggs
- 1 tbsp (15ml) White vinegar
- 1 tbsp (14g) Unsalted butter
- 1 tbsp (15ml) Extra virgin olive oil
- 1 tsp (2g) Aleppo pepper
- 1/2 tsp (1g) Cumin
Instructions:
- In a small mixing bowl, whisk together the Greek yogurt, minced garlic, lemon juice, and salt. Fold in the fresh dill.
- Spread the yogurt mixture evenly onto two shallow bowls or plates, using the back of a spoon to create a slight well in the center.
- Bring a medium saucepan of water to a bare simmer and stir in the white vinegar.
- Crack an egg into a fine-mesh strainer to remove watery whites, then gently slide it into the simmering water. Poach for 3 minutes until whites are opaque and center remains wobbly.
- Remove eggs with a slotted spoon and drain briefly on a paper towel.
- In a small skillet, melt the butter and olive oil over medium heat until foaming. Stir in the Aleppo pepper and cumin.
- Place poached eggs atop the yogurt base and drizzle the sizzling spiced butter over the top.
