Ingredients:
- 2 large (100g) eggs
- 2 tbsp (30g) plain Greek yogurt
- 1 tbsp (14g) unsalted butter
- 1/4 tsp (1.5g) fine sea salt
- 1/8 tsp (0.5g) cracked black pepper
Instructions:
- Crack the eggs into a mixing bowl. Add the Greek yogurt, salt, and pepper. Whisk vigorously for 30–60 seconds until the mixture is completely smooth and no yogurt streaks remain.
- Place a non-stick skillet over medium-low heat and add the butter. Once the butter foams and smells nutty, pour in the egg mixture. Let it sit undisturbed for about 20 seconds until the edges begin to set.
- Using a silicone spatula, gently push the cooked edges toward the center to create large, soft ribbons. Continue folding slowly.
- Remove the pan from the heat when the eggs look slightly underdone (wet and glossy); residual heat will finish the cooking process on the plate.
