Ingredients:
- 1.5 cups all-purpose flour
- 0.5 cup granulated sugar
- 1 tsp baking powder
- 0.5 tsp salt
- 2 large eggs
- 0.5 cup plain Greek yogurt
- 0.5 cup unsalted butter, melted and cooled
- 2 tbsp lemon zest
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp melted butter
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, beat the granulated sugar and lemon zest together until fragrant.
- Whisk in the eggs, Greek yogurt, melted butter, lemon juice, and vanilla until the batter is smooth and pale.
- Gently fold the dry ingredients into the wet batter using a spatula until no flour streaks remain.
- Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
- Whisk together the powdered sugar, lemon juice, lemon zest, and melted butter until smooth.
- Pour the glaze over the warm loaf and let it set for 20 minutes before slicing.
