Ingredients:

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 2 large eggs
  • 0.5 cup plain Greek yogurt
  • 0.5 cup unsalted butter, melted and cooled
  • 2 tbsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp melted butter

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the granulated sugar and lemon zest together until fragrant.
  4. Whisk in the eggs, Greek yogurt, melted butter, lemon juice, and vanilla until the batter is smooth and pale.
  5. Gently fold the dry ingredients into the wet batter using a spatula until no flour streaks remain.
  6. Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
  8. Whisk together the powdered sugar, lemon juice, lemon zest, and melted butter until smooth.
  9. Pour the glaze over the warm loaf and let it set for 20 minutes before slicing.
