Ingredients:

  • 1.5 lbs Large Shrimp (16/20 count), peeled and deveined
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Smoked Paprika
  • 1/2 tsp Red Pepper Flakes
  • 1/2 tsp Kosher Salt
  • 4 tbsp Unsalted Butter, chilled and cubed
  • 6 cloves Fresh Garlic, minced
  • 1 medium Lemon, juiced and zested
  • 1/4 cup Fresh Italian Parsley, finely chopped
  • 1/4 tsp Freshly Cracked Black Pepper

Instructions:

  1. In a large mixing bowl, toss the shrimp with olive oil, smoked paprika, red pepper flakes, and salt. Thread 2-3 shrimp onto each wooden or metal skewer, piercing through both the body and the tail.
  2. Heat a large heavy-bottomed skillet or grill pan over medium-high heat until it begins to smoke. Place skewers in the pan and sear for 90 seconds per side until the shrimp are opaque and golden-brown.
  3. Reduce the heat to medium. Add the chilled, cubed butter and minced garlic into the skillet. Use a spoon to baste the shrimp with the foaming garlic butter for 60 seconds.
  4. Remove the pan from the heat. Squeeze fresh lemon juice over the skewers and garnish with lemon zest, fresh parsley, and black pepper before serving.
