Ingredients:
- 1.5 lbs Large Shrimp (16/20 count), peeled and deveined
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Smoked Paprika
- 1/2 tsp Red Pepper Flakes
- 1/2 tsp Kosher Salt
- 4 tbsp Unsalted Butter, chilled and cubed
- 6 cloves Fresh Garlic, minced
- 1 medium Lemon, juiced and zested
- 1/4 cup Fresh Italian Parsley, finely chopped
- 1/4 tsp Freshly Cracked Black Pepper
Instructions:
- In a large mixing bowl, toss the shrimp with olive oil, smoked paprika, red pepper flakes, and salt. Thread 2-3 shrimp onto each wooden or metal skewer, piercing through both the body and the tail.
- Heat a large heavy-bottomed skillet or grill pan over medium-high heat until it begins to smoke. Place skewers in the pan and sear for 90 seconds per side until the shrimp are opaque and golden-brown.
- Reduce the heat to medium. Add the chilled, cubed butter and minced garlic into the skillet. Use a spoon to baste the shrimp with the foaming garlic butter for 60 seconds.
- Remove the pan from the heat. Squeeze fresh lemon juice over the skewers and garnish with lemon zest, fresh parsley, and black pepper before serving.
