Ingredients:
- 1/2 cup (100 g) Granulated Sugar
- 1/2 cup (120 ml) Water
- 1/4 cup (60 ml) Fresh Lemon Juice
- 1/4 cup (60 ml) Fresh Lime Juice
- 5 fl oz (135 ml) Irish Whiskey
- 3 fl oz (90 ml) Peach Schnapps
- 3 fl oz (90 ml) Cold Sweet & Sour Mix (homemade)
- Splash Lemon-Lime Soda (optional)
Instructions:
- Combine the granulated sugar and water in a small saucepan over medium heat, or simply stir with hot water until the sugar is completely dissolved. Do not boil vigorously; just ensure clarity.
- Remove the pan from the heat and allow the simple syrup to cool slightly.
- Add the fresh lemon and lime juices to the cooled simple syrup. Stir thoroughly. Strain the mixture through a fine-mesh strainer to remove any pulp or seeds. Transfer the Sweet & Sour Mix to an airtight container and refrigerate for a minimum of 30 minutes until thoroughly chilled.
- Fill the cocktail shaker approximately three-quarters full with good, solid ice cubes.
- Pour the chilled Irish Whiskey, Peach Schnapps, and the cold Sweet & Sour Mix into the shaker, following the precise measurements.
- Secure the lid tightly and shake vigorously for 15–20 seconds until the exterior of the shaker is frosted and very cold. This shaking process is vital for proper chilling and aeration.
- Place the shot glasses on the bar or counter. Strain the mixture evenly and quickly into the prepared shot glasses.
- If desired, top each shot with a tiny splash (about a teaspoon) of cold lemon-lime soda for a bit of lift and fizz. Serve Immediately while ice-cold.
