Ingredients:

  • 1 cup Granulated Sugar
  • 1 cup Filtered Water
  • 2-inch piece Fresh Ginger, sliced (optional)
  • Sunshine Spritz Assembly (Per Serving): 2 fl oz Chilled Simple Syrup
  • Sunshine Spritz Assembly (Per Serving): 1 fl oz Fresh Lime Juice
  • Sunshine Spritz Assembly (Per Serving): 4 fl oz Sparkling Water or Soda Water
  • Summer Berry Cooler Assembly (Per Serving): 1.5 fl oz Chilled Simple Syrup
  • Summer Berry Cooler Assembly (Per Serving): 5 large Raspberries or Mixed Berries (fresh or frozen)
  • Summer Berry Cooler Assembly (Per Serving): 5 large Fresh Mint Leaves
  • Summer Berry Cooler Assembly (Per Serving): 4 fl oz Lemonade (chilled)

Instructions:

  1. Combine Ingredients: In a small saucepan, combine the sugar, water, and sliced ginger (if using).
  2. Dissolve and Simmer: Bring the mixture to a gentle boil over medium heat, stirring until the sugar is completely dissolved. Once boiling, immediately reduce the heat and simmer gently for 2 minutes. Do not allow it to caramelise.
  3. Steep and Cool: Remove the pan from the heat. Allow the ginger to steep for 15 minutes to infuse the flavour.
  4. Strain and Chill: Strain the syrup through a fine-mesh sieve into a clean, airtight container, discarding the ginger. Place the syrup in the refrigerator and chill for at least 30 minutes, or until completely cold.
  5. Sunshine Spritz - Chill Glassware: Fill a highball glass with ice cubes. Lots of ice is key!
  6. Sunshine Spritz - Add Foundation: Pour the measured chilled Simple Syrup (2 fl oz) and the fresh lime juice (1 fl oz) into the glass. Stir briefly to combine.
  7. Sunshine Spritz - Top Up: Top the glass with chilled sparkling water or club soda (4 fl oz or to top). Garnish with a thin wheel of lime or a candied ginger slice. Serve immediately.
  8. Summer Berry Cooler - Muddle: Place the raspberries and the mint leaves directly into the bottom of a sturdy highball glass. Using a muddler, gently press the berries and mint 3 to 4 times to extract flavor, avoiding shredding the mint.
  9. Summer Berry Cooler - Add Liquids: Pour the measured chilled Simple Syrup (1.5 fl oz) over the muddled fruit and mint.
  10. Summer Berry Cooler - Fill and Top: Fill the glass halfway with ice, then pour in the chilled lemonade (4 fl oz or to top) until the glass is nearly full.
  11. Summer Berry Cooler - Final Stir and Serve: Give a gentle stir with a spoon to lift the fruit. Garnish with a sprig of fresh mint and an extra raspberry.
