Ingredients:

  • 2 cups (400g) glutinous rice
  • 4 cups (950ml) filtered water
  • 1/2 tsp (3g) salt

Instructions:

  1. Place the rice in a fine-mesh colander and rinse under cold running water, rubbing the grains gently until the water runs clear.
  2. Transfer the rinsed rice to a bowl and cover with 4 cups (950ml) of water; soak for at least 4 hours, ideally 8 hours (overnight).
  3. Pour the soaked rice back into the colander and drain thoroughly.
  4. Fill a large pot with about 2 inches (5cm) of water, ensuring the water level remains below the bottom of the steamer basket.
  5. Spread the drained rice evenly in the steamer basket without packing it down to allow steam circulation.
  6. Place the steamer over the pot, cover with a tight lid, and bring water to a boil over medium-high heat.
  7. Reduce heat to medium and steam for 25–30 minutes until grains look translucent and glossy.
  8. If using a metal steamer, gently stir the rice with a fork halfway through the steaming process.
  9. Remove the steamer from heat and gently fluff the grains with a fork or wooden spoon to release trapped steam.
