Ingredients:

  • 0.5 cup Unsalted Butter
  • 2 cloves Fresh Garlic, minced
  • 0.25 tsp Nutmeg, freshly grated
  • 1.5 cups Half-and-half
  • 0.25 cup Starchy Pasta Water
  • 1.5 cups Parmesan Cheese, freshly grated
  • 0.5 tsp Black Pepper
  • 0.25 tsp Sea Salt

Instructions:

  1. Place a heavy-bottomed skillet over medium-low heat. Melt the butter until foaming. Add minced garlic and sauté for 45 seconds until fragrant and translucent, ensuring it does not brown.
  2. Slowly pour in the half-and-half while whisking constantly. Bring to a gentle simmer (do not boil) and simmer gently for 3 minutes. Do not let it reach a rolling boil.
  3. Reduce heat to the lowest setting. Gradually whisk in the freshly grated Parmesan cheese and the reserved starchy pasta water. Continue whisking until the cheese is completely melted and the sauce is glossy.
  4. Season with nutmeg, black pepper, and sea salt. Toss immediately with pasta or serve as a dipping sauce.
