Ingredients:
- 1 large English cucumber, thinly sliced
- 1 pint cherry tomatoes, halved
- 1/2 medium red onion, thinly sliced into half-moons
- 1/4 cup fresh parsley, chopped
- 1/3 cup apple cider vinegar
- 2 tbsp extra virgin olive oil
- 2 tbsp granulated sugar
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Slice the cucumbers into thin rounds (about 1/8 inch). Halve the cherry tomatoes and slice the red onion into paper-thin half-moons. Combine all three in a large mixing bowl.
- In a small bowl or mason jar, whisk together the vinegar, sugar, salt, pepper, and red pepper flakes until the sugar is completely dissolved. Slowly stream in the olive oil while whisking vigorously until the dressing looks glossy and unified.
- Pour the dressing over the vegetables and toss gently to ensure every slice is coated. Stir in the chopped parsley.
- Cover the bowl and refrigerate for at least 30 minutes to allow the vegetables to marinate.
