Ingredients:

  • 10 oz (280g) frozen spinach, thawed and squeezed dry
  • 1 tbsp (15ml) olive oil
  • 1/2 cup (50g) yellow onion, finely diced
  • 2 cloves (6g) garlic, minced
  • 6 large eggs
  • 1/2 cup (120g) cottage cheese
  • 1/4 cup (60g) sour cream
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1/8 tsp (0.5g) ground nutmeg
  • 1 cup (115g) mozzarella cheese, shredded
  • 1/4 cup (25g) Parmesan cheese, grated

Instructions:

  1. Heat olive oil in a pan over medium heat. Add the diced onion and sauté until translucent (about 3–4 minutes).
  2. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Add the thawed, squeezed spinach. Stir for 2 minutes just to combine and heat through. Remove from heat and let cool slightly.
  4. In a large bowl, crack the 6 eggs and whisk vigorously until the yolks and whites are fully integrated.
  5. Stir in the cottage cheese and sour cream until the mixture is smooth and velvety.
  6. Add the salt, pepper, and nutmeg, whisking one last time to ensure the spices are evenly distributed.
  7. Preheat your oven to 350°F (175°C). Grease your 9-inch dish with butter or non-stick spray.
  8. Spread the sautéed spinach evenly across the bottom of the dish.
  9. Sprinkle half of the mozzarella and all of the Parmesan over the spinach.
  10. Pour the egg custard over the cheese and spinach, top with the remaining mozzarella, and bake for 45 minutes or until the center is set.
