Ingredients:
- 10 oz (280g) frozen spinach, thawed and squeezed dry
- 1 tbsp (15ml) olive oil
- 1/2 cup (50g) yellow onion, finely diced
- 2 cloves (6g) garlic, minced
- 6 large eggs
- 1/2 cup (120g) cottage cheese
- 1/4 cup (60g) sour cream
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1/8 tsp (0.5g) ground nutmeg
- 1 cup (115g) mozzarella cheese, shredded
- 1/4 cup (25g) Parmesan cheese, grated
Instructions:
- Heat olive oil in a pan over medium heat. Add the diced onion and sauté until translucent (about 3–4 minutes).
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the thawed, squeezed spinach. Stir for 2 minutes just to combine and heat through. Remove from heat and let cool slightly.
- In a large bowl, crack the 6 eggs and whisk vigorously until the yolks and whites are fully integrated.
- Stir in the cottage cheese and sour cream until the mixture is smooth and velvety.
- Add the salt, pepper, and nutmeg, whisking one last time to ensure the spices are evenly distributed.
- Preheat your oven to 350°F (175°C). Grease your 9-inch dish with butter or non-stick spray.
- Spread the sautéed spinach evenly across the bottom of the dish.
- Sprinkle half of the mozzarella and all of the Parmesan over the spinach.
- Pour the egg custard over the cheese and spinach, top with the remaining mozzarella, and bake for 45 minutes or until the center is set.
