Ingredients:
- 14 oz Extra-Firm Tofu
- 2 tbsp Cornstarch
- 1 tbsp Avocado oil
- 0.5 tsp Garlic powder
- 0.5 tsp Smoked paprika
- 2 tbsp Low-sodium soy sauce
- 1 tsp Toasted sesame oil
- 1 tsp Maple syrup
Instructions:
- Press the 14 oz extra firm tofu for at least 15 minutes. Note: This removes the water that would otherwise steam the starch into a soggy mess.
- Tear the tofu into bite-sized chunks rather than using a knife. Note: Ragged edges provide more surface area for the starch to cling to, increasing the crunch.
- Whisk 2 tbsp soy sauce, 1 tsp toasted sesame oil, 1 tsp maple syrup, garlic powder, and smoked paprika in a large bowl.
- Add the tofu chunks to the bowl and toss gently. Wait 2 minutes until the liquid is mostly absorbed into the pores of the tofu.
- Sprinkle 2 tbsp cornstarch over the marinated tofu. Toss again until no white powder is visible and each piece is slightly tacky.
- Drizzle 1 tbsp avocado oil over the tofu and give it one last toss. Note: The oil activates the starch so it fries rather than just baking dry.
- Place in a single layer in the air fryer basket at 400°F. Cook for 15 minutes, shaking the basket vigorously at the 8 minute mark.
- Continue cooking until the edges are dark golden and the pieces sound clink y when shaken.
