Ingredients:

  • 14 oz Extra-Firm Tofu
  • 2 tbsp Cornstarch
  • 1 tbsp Avocado oil
  • 0.5 tsp Garlic powder
  • 0.5 tsp Smoked paprika
  • 2 tbsp Low-sodium soy sauce
  • 1 tsp Toasted sesame oil
  • 1 tsp Maple syrup

Instructions:

  1. Press the 14 oz extra firm tofu for at least 15 minutes. Note: This removes the water that would otherwise steam the starch into a soggy mess.
  2. Tear the tofu into bite-sized chunks rather than using a knife. Note: Ragged edges provide more surface area for the starch to cling to, increasing the crunch.
  3. Whisk 2 tbsp soy sauce, 1 tsp toasted sesame oil, 1 tsp maple syrup, garlic powder, and smoked paprika in a large bowl.
  4. Add the tofu chunks to the bowl and toss gently. Wait 2 minutes until the liquid is mostly absorbed into the pores of the tofu.
  5. Sprinkle 2 tbsp cornstarch over the marinated tofu. Toss again until no white powder is visible and each piece is slightly tacky.
  6. Drizzle 1 tbsp avocado oil over the tofu and give it one last toss. Note: The oil activates the starch so it fries rather than just baking dry.
  7. Place in a single layer in the air fryer basket at 400°F. Cook for 15 minutes, shaking the basket vigorously at the 8 minute mark.
  8. Continue cooking until the edges are dark golden and the pieces sound clink y when shaken.
