Ingredients:
- 1 lb (450g) Penne or Fusilli pasta
- 4 quarts (3.8L) Water
- 1 tbsp (15g) Sea salt
- 2 tbsp (28g) Extra virgin olive oil
- 3 cloves (15g) Garlic, minced
- 1/2 small (60g) Yellow onion, finely diced
- 2 cups (300g) Cherry tomatoes, halved
- 1/2 cup (120ml) Light cream
- 1/2 cup (50g) Freshly grated Parmesan cheese
- 1/2 tsp (2g) Red pepper flakes
- 4 cups (120g) Fresh baby spinach
- 1/4 cup (15g) Fresh basil, chiffonade
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Cracked black pepper
Instructions:
- Boil the water and salt. Add the pasta and cook until al dente. Note: Check the box timing and pull it 1 minute early.
- Scoop 1 cup of cloudy pasta water into a glass before draining. Drain the pasta and set it aside.
- Heat olive oil in the skillet over medium heat. Sauté the diced onion for 3-4 minutes until translucent and soft.
- Stir in the minced garlic and red pepper flakes. Cook for 60 seconds until you smell a nutty aroma.
- Add the halved cherry tomatoes. Cook for 5-7 minutes, stirring occasionally, until the skins wrinkle and they begin to burst.
- Lower heat to medium low. Stir in the light cream and grated Parmesan.
- Pour in 1/4 cup of the reserved pasta water. Whisk gently until the sauce is velvety and smooth.
- Add the cooked pasta, baby spinach, and basil to the skillet.
- Toss gently for 1-2 minutes until the spinach has just wilted under the heat.
- Season with salt and cracked black pepper to taste.
