  • 1 cup Old-Fashioned Rolled Oats (not instant)
  • 2 cups Water (or preferred Milk)
  • Pinch Fine Sea Salt
  • 2 Tbsp Heavy Cream or Milk (Optional)
  • Maple Syrup or Honey (To taste)
  • 1/2 cup Fresh Berries (e.g., Blueberries, Raspberries)
  • 1 Tbsp Chopped Walnuts or Pecans

Instructions:

  1. Combine the water (or milk) and the pinch of salt in a medium saucepan. Bring the liquid to a rolling boil over medium-high heat.
  2. Once boiling vigorously, stir in the rolled oats quickly.
  3. Immediately reduce the heat to low or medium-low to maintain a gentle simmer.
  4. Simmer the oats for 5 minutes, stirring frequently (every 30–45 seconds) to prevent sticking and encourage starch release for creaminess. The porridge should thicken.
  5. Remove the saucepan from the heat. If desired, stir in the optional 2 tablespoons of cream or milk for extra richness.
  6. Cover the saucepan and let the porridge stand undisturbed for 2 minutes. This allows the oats to fully swell, resulting in a tender consistency.
  7. Divide the porridge evenly between two serving bowls and top immediately with your chosen toppings, nuts, and sweetener.
