Ingredients:
- 1 cup Old-Fashioned Rolled Oats (not instant)
- 2 cups Water (or preferred Milk)
- Pinch Fine Sea Salt
- 2 Tbsp Heavy Cream or Milk (Optional)
- Maple Syrup or Honey (To taste)
- 1/2 cup Fresh Berries (e.g., Blueberries, Raspberries)
- 1 Tbsp Chopped Walnuts or Pecans
Instructions:
- Combine the water (or milk) and the pinch of salt in a medium saucepan. Bring the liquid to a rolling boil over medium-high heat.
- Once boiling vigorously, stir in the rolled oats quickly.
- Immediately reduce the heat to low or medium-low to maintain a gentle simmer.
- Simmer the oats for 5 minutes, stirring frequently (every 30–45 seconds) to prevent sticking and encourage starch release for creaminess. The porridge should thicken.
- Remove the saucepan from the heat. If desired, stir in the optional 2 tablespoons of cream or milk for extra richness.
- Cover the saucepan and let the porridge stand undisturbed for 2 minutes. This allows the oats to fully swell, resulting in a tender consistency.
- Divide the porridge evenly between two serving bowls and top immediately with your chosen toppings, nuts, and sweetener.
