Ingredients:

  • 1 cup (225g) full-fat cottage cheese (4% milkfat)
  • 2 tbsp (10g) grated Parmesan cheese
  • 1 tsp (3g) everything bagel seasoning
  • 1/4 tsp smoked paprika
  • 1/8 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your sturdiest baking sheet with parchment paper. Note: Preheating is vital for the immediate evaporation of surface moisture.
  2. Drain any excess liquid from your 1 cup (225g) of cottage cheese using a fine mesh sieve.
  3. In a medium bowl, gently fold together the cottage cheese, 2 tbsp (10g) grated Parmesan, 1 tsp (3g) everything bagel seasoning, 1/4 tsp smoked paprika, and 1/8 tsp black pepper.
  4. Scoop rounded tablespoons of the mixture onto the prepared baking sheet, leaving at least 2 inches between each.
  5. Use the back of a spoon to gently flatten each dollop into a thin circle. until they are about 1/8 inch thick.
  6. Place the sheet in the center rack of the oven and bake for 30 minutes. until the edges are deep golden and the centers look dry.
  7. Keep a close eye on them during the last 5 minutes; they go from perfect to burnt very quickly.
  8. Remove from the oven and let them sit on the pan for 5 minutes. until they firm up and become brittle.
  9. Gently lift the chips with a spatula and transfer to a wire rack to finish cooling completely.
  10. Serve immediately while the snap is at its peak.
