Ingredients:
- 1.5 cups (300g) glutinous rice
- 2 cups (480ml) filtered water
- 0.5 tsp (3g) fine sea salt
- 1 cup (240ml) full-fat coconut milk
- 0.5 cup (100g) granulated sugar
- 0.5 tsp (3g) fine sea salt
- 1 pandan leaf
Instructions:
- Rinse the glutinous rice in a fine-mesh strainer under cold water for 2–3 minutes until the water runs clear.
- Submerge the rice in a bowl of water and soak for at least 4 hours, preferably overnight.
- Drain the soaked rice in a strainer for 5 minutes.
- Steam the rice in a steamer basket lined with cheesecloth or perforated parchment for 20–25 minutes until grains are translucent and tender.
- In a small saucepan, combine coconut milk, sugar, salt, and the knotted pandan leaf. Heat until sugar is dissolved.
- Fold the sweetened coconut cream into the hot, steamed rice and let it rest to absorb the sauce.
