Ingredients:

  • 1.5 cups (300g) glutinous rice
  • 2 cups (480ml) filtered water
  • 0.5 tsp (3g) fine sea salt
  • 1 cup (240ml) full-fat coconut milk
  • 0.5 cup (100g) granulated sugar
  • 0.5 tsp (3g) fine sea salt
  • 1 pandan leaf

Instructions:

  1. Rinse the glutinous rice in a fine-mesh strainer under cold water for 2–3 minutes until the water runs clear.
  2. Submerge the rice in a bowl of water and soak for at least 4 hours, preferably overnight.
  3. Drain the soaked rice in a strainer for 5 minutes.
  4. Steam the rice in a steamer basket lined with cheesecloth or perforated parchment for 20–25 minutes until grains are translucent and tender.
  5. In a small saucepan, combine coconut milk, sugar, salt, and the knotted pandan leaf. Heat until sugar is dissolved.
  6. Fold the sweetened coconut cream into the hot, steamed rice and let it rest to absorb the sauce.
