Ingredients:
- 6 cups (900g) fresh peaches, sliced
- 1/2 cup (100g) dark brown sugar, packed
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- 2 tbsp (16g) cornstarch
- 1/4 tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) dark brown sugar, packed
- 1 tbsp (12g) baking powder
- 1/4 tsp (1.5g) salt
- 3/4 cup (180ml) whole milk
- 6 tbsp (85g) unsalted butter, melted
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, toss the sliced peaches with brown sugar, lemon juice, cinnamon, cornstarch, and salt until evenly coated and glossy.
- Pour the fruit mixture into a 9x9 inch baking dish or cast-iron skillet, spreading it evenly to the edges.
- In a medium bowl, whisk together the flour, brown sugar, baking powder, and salt until no clumps remain.
- Pour in the milk and melted butter, whisking until just combined—do not overmix.
- Carefully pour the batter over the peaches and spread gently with a spatula, leaving a few gaps for fruit juices to bubble through.
- Bake for 35–40 minutes until the edges are bubbling and the top is deep golden-brown and springy to the touch.
