Ingredients:

  • 6 cups (900g) fresh peaches, sliced
  • 1/2 cup (100g) dark brown sugar, packed
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 2 tbsp (16g) cornstarch
  • 1/4 tsp (1.5g) salt
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) dark brown sugar, packed
  • 1 tbsp (12g) baking powder
  • 1/4 tsp (1.5g) salt
  • 3/4 cup (180ml) whole milk
  • 6 tbsp (85g) unsalted butter, melted

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, toss the sliced peaches with brown sugar, lemon juice, cinnamon, cornstarch, and salt until evenly coated and glossy.
  3. Pour the fruit mixture into a 9x9 inch baking dish or cast-iron skillet, spreading it evenly to the edges.
  4. In a medium bowl, whisk together the flour, brown sugar, baking powder, and salt until no clumps remain.
  5. Pour in the milk and melted butter, whisking until just combined—do not overmix.
  6. Carefully pour the batter over the peaches and spread gently with a spatula, leaving a few gaps for fruit juices to bubble through.
  7. Bake for 35–40 minutes until the edges are bubbling and the top is deep golden-brown and springy to the touch.
