Ingredients:

  • 1 lb cooked chicken breast, diced or shredded
  • 6 slices thick-cut bacon
  • 2 medium Roma tomatoes, seeded and diced
  • 2 cups romaine lettuce, finely chopped
  • 3 stalks green onions, thinly sliced
  • 1/2 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1/2 tsp garlic powder
  • salt to taste
  • black pepper to taste

Instructions:

  1. Cook the bacon until deep mahogany and rigid. Allow it to cool completely on paper towels to maintain crispness.
  2. Seed and dice the Roma tomatoes and chop the romaine lettuce into small, uniform pieces.
  3. In a large mixing bowl, whisk together the mayonnaise, lemon juice, and garlic powder until smooth and velvety.
  4. Add the diced chicken, crumbled bacon, and green onions to the bowl. Gently fold the ingredients into the dressing.
  5. Add the diced tomatoes and chopped lettuce last, folding them in gently just until combined to prevent excess moisture release.
