- 6 cups (900g) peeled and sliced peaches
- 1/2 cup (100g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/4 tsp (1.5g) salt
- 2 cups (250g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, chilled and cubed
- 3/4 cup (180ml) whole milk
- 1 tbsp (15g) coarse sugar
Instructions:
- In a large bowl, combine sliced peaches, sugar, cornstarch, cinnamon, lemon juice, and salt. Stir gently until the peaches are evenly coated and the mixture looks glossy.
- Pour the peach filling into a 9x13 inch baking dish, spreading them into an even layer.
- Whisk together flour, sugar, baking powder, and salt in a separate bowl.
- Add chilled butter cubes to the dry mix. Use a pastry cutter or forks to work the butter into the flour until the mixture resembles coarse crumbs with a few pea-sized chunks remaining.
- Pour in the milk and stir with a spatula just until the flour disappears, leaving the dough shaggy and slightly lumpy.
- Spoon the dough in mounds over the peaches, leaving small gaps of fruit showing for a rustic look.
- Sprinkle the tops of the biscuits with coarse sugar.
- Bake in a preheated 375°F (190°C) oven for 40-45 minutes until the biscuits are mahogany-colored and the peach syrup is bubbling vigorously around the edges.
